Quick Minestrone Recipes

Ingredients :

1 tbsp olive oil

1 medium onion, chopped

1 stalk celery with leaves, chopped

1 large clove garlic, minced

2 tsp dried Italian herb, blend

3 tbsp raw quick-cooking brown rice

1 large unpeeled potato, cut into 1/4-inch dice

10-ounce package frozen mixed vegetables

4 cups canned vegetable broth

1 15-ounce can cannellini or other small white beans, drained and rinsed

1/3 cup elbow or small pasta shells

2 tbsp tomato paste

salt and freshly ground pepper to taste

grated parmesan cheese for garnish, optional

Method :
  1. Heat oil in a large saucepan placed over medium-high heat. Add onion, celery, garlic and Italian herbs. Cook, stirring, until onion is translucent (5 minutes) and herbs begin to release their flavor. Add rice, potato, mixed vegetables, and vegetable broth. Cover; simmer 10 minutes.
  2. Stir in beans, pasta, and tomato paste. Bring to a boil again over high heat. Reduce heat to low, cover, and simmer 10 minutes or until pasta is al dente. Add salt and pepper. Garnish with Parmesan.

Serves 4

Double the minestrone recipe to make two meals, if you like; it won't take any more cooking time.
