Borlotti Beans With Mushrooms Recipes

Ingredients :

olive oil

butter

shallots, chopped

garlic cloves, crushed

mixed mushrooms, thickly sliced

pieces sun dried tomatoes in oil, drained and chopped

dry white wine

borlotti beans

grated Parmesan cheese

chopped fresh parsley

salt and black pepper

freshly cooked pappardelle pasta, to serve

Method :

  1. Heat the oil and butter in a frying pan and fry the shallots until soft.

  2. Add the garlic and mushrooms to the pan and fry for 3 - 4 minutes.

  3. Stir in the sun dried tomatoes, wine and seasoning to taste.

  4. Stir in the borlotti beans and cook for 5 - 6 minutes, until most of the liquid has evaporated and the beans are warmed through.

  5. Stir in the grated Parmesan cheese.

  6. Sprinkle with parsley and serve immediately with pappardelle.

Serves 4

A mixture of wild and cultivated mushrooms helps to give this dish a rich and nutty flavor.
