Stuffed Cabbage Recipes

Ingredients :

1 savory cabbage

15ml oil

115g minced beef

1 red onion, chopped

15ml chopped fresh thyme

25g plain flour

25g sultanas

150ml beef stock

50g canned chickpeas, drained

5ml garam masala

50g fresh wholemeal breadcrumbs

salt and freshly ground black pepper

Method :
  1. Preheat the oven to 400F, Gas 6.
  2. Remove the outer leaves from the cabbage.
  3. Blanch the remaining cabbage in boiling water for 5 minutes.
  4. Drain well.
  5. Heat the oil in a large pan and fry the minced beef for 5 minutes.
  6. Add the onion and the thyme and cook for a further 3 minutes.
  7. Stir in the flour and cook for 1 minute.
  8. Add the sultanas and slowly pour in the stock.
  9. Stir in the chickpeas and garam masala.
  10. Remove the mixture from the heat and add the breadcrumbs.
  11. Mix and season well.
  12. Trim the top from the cabbage and scoop out the center.
  13. Spoon in the mince mixture, warp in foil and bake in the preheated oven for 30 minutes.
  14. Serve with freshly cooked vegetables.

Cooking Tip - Use the filling to stuff beefsteak tomatoes, cooked aubergines or peppers. Grill under a medium heat for 10-15 minutes.

An unusual combination of flavors, this recipe incorporates a Middle Eastern filling into a traditional English dish.
