Spinach with Olive Oil and Lemon Dressing Recipes
2 tbsp butter
2 garlic cloves, finely chopped
4 tbsp olive oil
2 tbsp lemon juice
salt and pepper
- Put the spinach in a large
saucepan with just the water left on the leaves, sprinkling the
layers with salt to taste.
- Cover the pan and cook over a
medium heat for 5-7 minutes until the spinach has wilted and is
tender, shaking the pan vigorously from time to time.
- Drain the spinach thoroughly in
the colander, then return it to the rinsed-out pan and toss over a
high heat until any remaining water is driven off.
- Add the butter and garlic, and
continue tossing until combined with the spinach.
- Transfer to a warmed serving dish.
- Drizzle over the oil and lemon
juice, sprinkle with salt and pepper to taste.
- Ready to serve.
