Quick Italian Spinach Recipes
1 tbsp olive oil
1 red onion, sliced
1 garlic clove, chopped
75g pine nuts
4 tomatoes, skinned, cored and roughly
50g oz butter
pinch of nutmeg
salt and pepper
- Heat oil in large saucepan, add
onion and garlic, saute for 5 minutes.
- Put the pine nuts into a
heavy-based frying pan and dry-fry over moderate heat until browned,
stir constantly, set aside.
- Add tomatoes, spinach, butter,
nutmeg to the onions and garlic, season with salt and pepper.
- Turn up the heat to high and mix
- Cook for 3 minutes until the
spinach has just started to wilt.
- Remove the pan from the heat, stir
in the pine nuts.
- Ready to serve.
The spinach must be dry before you
start to cook. Dry it in a salad spinner or press it in a tea towel.
