Quick Italian Spinach Recipes

Ingredients :

1 tbsp olive oil

1 red onion, sliced

1 garlic clove, chopped

75g pine nuts

4 tomatoes, skinned, cored and roughly chopped

1kg spinach

50g oz butter

pinch of nutmeg

salt and pepper

Method :
  1. Heat oil in large saucepan, add onion and garlic, saute for 5 minutes.
  2. Put the pine nuts into a heavy-based frying pan and dry-fry over moderate heat until browned, stir constantly, set aside.
  3. Add tomatoes, spinach, butter, nutmeg to the onions and garlic, season with salt and pepper.
  4. Turn up the heat to high and mix well.
  5. Cook for 3 minutes until the spinach has just started to wilt.
  6. Remove the pan from the heat, stir in the pine nuts.
  7. Ready to serve.

Serves 5

The spinach must be dry before you start to cook. Dry it in a salad spinner or press it in a tea towel.
