Creme of Spinach Soup Recipes

Ingredients :

1/4 tsp

leaf spinach or silverbeet

butter or margarine

small onion, peeled and finely chopped

plain flour

chicken stock

milk

nutmeg

freshly ground pepper

Method :
  1. Wash spinach well, place in large pan with about 2 tbsp water.
  2. Cook until tender - about 5 minutes.
  3. Drain well, rub through a sieve or puree in a food processor.
  4. Set aside.
  5. Melt butter in a saucepan, sauté onion until soft and transparent.
  6. Remove pot from heat.
  7. Stir in flour, blend in stock and milk off heat.
  8. Return to low heat, stirring continuously until mixture boils and thickens.
  9. Stir in spinach puree, nutmeg and seasoning.
  10. Heat gently.
  11. Serve immediately with bread rolls.
