Heat the butter in a large heavy
based frying pan.
Add the onion and cook over medium
heat for 5 minutes, or until soft and golden.
Add the spinach and cook for 2
minutes, or until the spinach is soft.
Stir in the cream and nutmeg and
cook for 2 minutes, or until the spinach is tender and the cream is
heated through.
Sprinkle with the cheese.
Serve hot.

Note :
For a smoother texture, the Creamed
Spinach can be puréed in a food processor. Frozen spinach may be used in
this recipe. Ensure that it is completely thawed and all excess moisture
is squeezed from it, or lay it out on paper towels and leave it to dry.
