Austrian Red Cabbage Recipes
1 large onion, sliced
1 garlic clove, crushed
1kg red cabbage, shredded
2 large cooking apples, peeled, cored and
1 tsp caraway seeds
4 tbsp red wine vinegar
4 tbsp water
1 tbsp soft light brown sugar
6 juniper berries, crushed (optional)
salt and pepper
- Melt the butter in a large
saucepan, add the onion and garlic and fry gently for 5 minutes.
- Stir in the cabbage and apples and
simmer for 10 minutes, stir.
- Add caraway seeds, vinegar,
measured water, sugar and juniper berries, if using, season to taste
with salt and pepper.
- Bring to boil, lower the heat,
simmer 30-45 minutes, until the cabbage is tender and most of the
liquid has been absorbed.
- Ready to serve.
