Austrian Red Cabbage Recipes

Ingredients :

50g butter

1 large onion, sliced

1 garlic clove, crushed

1kg red cabbage, shredded

2 large cooking apples, peeled, cored and sliced

1 tsp caraway seeds

4 tbsp red wine vinegar

4 tbsp water

1 tbsp soft light brown sugar

6 juniper berries, crushed (optional)

salt and pepper

Method :
  1. Melt the butter in a large saucepan, add the onion and garlic and fry gently for 5 minutes.
  2. Stir in the cabbage and apples and simmer for 10 minutes, stir.
  3. Add caraway seeds, vinegar, measured water, sugar and juniper berries, if using, season to taste with salt and pepper.
  4. Bring to boil, lower the heat, simmer 30-45 minutes, until the cabbage is tender and most of the liquid has been absorbed.
  5. Ready to serve.
