Stuffed Courgettes (Teenda) Cooking Recipes

courgettes (teenda)

oil + for frying

onion, finely chopped

tomatoes, chopped

garam masala

chili powder

dried mango powder (amchoor)

cream

salt to taste

Method :
  1. Wash and dry the courgettes.
  2. Slice top to form a lid.
  3. Scoop out the center, keep aside.
  4. Heat oil in a pan, deep fry the courgettes for 1 -2 minutes from all sides.
  5. Drain excess oil and keep aside.
  6. Heat oil (4 tbsp) in a pan, sauté onion until transparent.
  7. Mix in tomatoes, cook for 4 -5 minutes, add garam masala, chili powder, mango powder and salt.
  8. Stir in the cream.
  9. Cover and cook on low heat for a few minutes.
  10. Fill each courgette cup with onion tomato mixture, replace lid, place on a baking tray and bake in a preheated oven (175C/350F) for 5 - 7 minutes.
  11. Remove lid and serve hot.

Serves 2 - 4

Preparation time : 20 minutes

Cooking time : 25 minutes
