Masala Poori Cooking Recipe

Ingredients :

flour, sieved

salt

cayenne pepper or paprika

turmeric (haldi) powder

coriander powder

cumin (jeera) ground

oil or butter, melted

water, warm

oil for frying

Method :
  1. Mix the flour, salt, cayenne pepper, turmeric, coriander and cumin.
  2. Add oil or butter and rub it in till it is thoroughly incorporated.
  3. Add water, knead into a medium soft dough.
  4. Lightly oil your palms and knead until the dough is silky smooth and pliable.
  5. Shape into a smooth ball.
  6. Brush with oil and keep aside for 3 hours.
  7. Knead again briefly, divide into 16 equal portions and shape into balls.
  8. Compress each into a 2" patty.
  9. Dip one end of the patty in oil and roll out into a 5" round, place on a flat surface.
  10. Similarly, roll out the other portions.
  11. Heat oil in a kadhai (wok).
  12. Carefully slip one round into the hot oil.
  13. Fry until it puffs up and is golden brown on both sides.
  14. Remove and drain on paper towels.
  15. Serve hot as an accompaniment to any curry dish.

Serves 16

Preparation time : 15 minutes + 1/2 hour - 3 hours (for dough resting)

Dessert time : 1/2 hours
