Vegetable Fritters (Pakoras) Cooking Recipes

Ingredients :

chick pea flour

self raising flour

crushed garlic

garam masala

water

potatoes

brinjal

onions

head cauliflower

chili powder (optional)

salt to taste

oil for deep frying

Method :
  1. Mix the flours with garlic, garam masala, salt, chili powder and water.
  2. Beat until smooth and light.
  3. Cover the bowl and set aside for 1 hour or longer.
  4. Peel the potatoes and cut into very thin round slices.
  5. Soak in cool water.
  6. Slice the brinjal thinly.
  7. Peel the onions and cut in halves lengthways, then into thin slices.
  8. Separate the cauliflower segments.
  9. Heat oil in a frying pan.
  10. Dip individual pieces of vegetable in the batter, allow any excess to drip off, and fry, a few at a time.
  11. Serve warm with a chutney.
