Stuffed Brinjals Cooking Recipes

Ingredients :

round brinjals

large onion, chopped


green peas

carrots, diced


finely chopped ginger

salt and pepper to taste

Method :
  1. Wash the brinjals and boil in salted water for 10 minutes until half cooked.
  2. Halve each brinjal and scoop out the pulp leaving 1 cm all the way around.
  3. Season the brinjals cases with salt and pepper.
  4. Heat ghee and fry the chopped onions lightly.
  5. Add the peas and diced carrots.
  6. Chop the brinjal pulp and add to the frying pan.
  7. Add also tomatoes.
  8. Cook over a low flame until vegetables are cooked.
  9. Add salt and ginger.
  10. Fry for 2 minutes.
  11. Fill brinjal cases with the cooked vegetables.
  12. Bake for 20 minutes until golden brown.
