Stuffed Bottle Gourd Recipes

Ingredients :

2 bottle gourd 450 g each

15g ginger garlic paste

30ml lemon juice

5g red chili powder

2g turmeric (haldi) powder

salt to taste

100g clarified butter (ghee)


60g clarified butter (ghee)

50g onion, finely chopped

150g cottage cheese (paneer)

300g potatoes, boiled, peeled, grated

10g ginger, chopped

10g green coriander, chopped

4 green chilies, chopped

5g garam masala

10 almond, chopped

10g raisins, chopped

salt to taste

1 lemon


30g clarified butter - ghee

400g tomatoes, blanched, puréed, strained

25g brown onion paste

5g red chili powder

5g garam masala

Method :
  1. Wash, peel and cut the ends of the bottle gourd.
  2. Core the length of each and keep aside.
  3. Mix all ingredients for the marinade and rub into the bottle gourd inside and out, keep aside for 1 hour.
  4. Heat clarified butter in a pan.
  5. Fry marinated bottle gourd evenly and keep aside to cool.
  6. Filling - heat clarified butter in a kadhai (wok) and sauté onions, add cottage cheese.
  7. Stir fry for few minutes, add grated potatoes along with the remaining ingredients, sauté for another 10 minutes and remove from heat.
  8. Allow to mixture to cool.
  9. Stuff each bottle gourd with the prepared mixture.
  10. Curry - heat clarified butter in a pan, mix all ingredients and bring to a boil.
  11. Place the stuffed bottle gourd in the curry, cover the pan and seal edges with dough.
  12. Cook on slow fire for 6-7 minutes.
  13. Remove from heat, slice the bottle gourd into 1 1/2" thick rounds, arrange on a serving platter and pour the curry on top.
  14. Serve hot.
