Spiced Cauliflower Recipes

Ingredients :

5 cauliflower, small, whole

oil for frying

200g onions, chopped

100g cashewnuts

6 green cardamoms (choti elaichi)

5g turmeric (haldi) powder

10g red chili powder

25g ginger paste

25g garlic paste

200g yoghurt, whisked

salt to taste

30g butter

15ml lemon juice

3g mace (javitri) powder

Method :
  1. Wash, clean and remove the stems of the cauliflower.
  2. Heat oil in a kadhai (wok), deep fry each cauliflower over medium heat until almost cooked.
  3. In the same oil, fry onions and cashewnuts (saving a few for garnishing), grind to a fine paste.
  4. Heat oil (5 tbsp) in a pan, add cardamoms, sauté for a few seconds.
  5. Add turmeric powder, red chili powder, ginger garlic pastes and garam masala, cook for 30 seconds.
  6. Add onions cashewnuts paste and whisked yoghurt, cook for 10 minutes on low heat and season to taste with salt.
  7. Arrange the fried cauliflower in a baking dish and pour the curry over cauliflower.
  8. Bake in a oven for 350F - 10 minutes.
  9. Garnish with fried cashew nuts, dot with melted butter and sprinkle lemon juice and mace powder.
  10. Serve hot.
