Saag Recipes

Ingredients :

200 g

spinach or other greens

medium, sized turnips


black mustard seeds

medium, sized red onion - finely chopped

fresh ginger, grated

chili powder

ground turmeric

garam masala

salt to taste

Method :
  1. Wash the greens, removing any tough stalks.
  2. Break the leaves into small pieces and put in a large pan with a sprinkling of water.
  3. Scrape and dice the turnips and add to the pan.
  4. Cover and cook over a low heat until the vegetables are soft.
  5. Mash the vegetables gently.
  6. In a frying pan, heat the ghee and fry the mustard seeds for a minute, then add the onion and ginger and fry until the onion is soft and golden brown.
  7. Add the chili, turmeric, salt and mashed vegetables.
  8. Stir and cook for five minutes, then sprinkle with garam masala.
  9. Cover and leave on the lowest possible heat until the liquid evaporates.
  10. Add salt to taste and dash of lemon juice if desired.
