Vegetable Curry Recipes

Ingredients :

red curry paste

coconut milk

kaffir lime leaves

onion, finely chopped

potatoes, chopped

pumpkin roughly chopped

red capsicum, chopped

zucchini, chopped

baby corn

beans, chopped

lime juices

fish sauce

chopped fresh coriander

soft brown sugar

Method :

Combine the curry paste, coconut milk and 1/2 cup (125ml) water in a wok or large pan. Bring to the boil, stirring occasionally. Add the lime leaves and onion; boil for 3 minutes. Add the potato and pumpkin and cook for 15 minutes, or until tender. Stir in the capsicum, zucchini, corn and beans; simmer for 10 minutes, or until the vegetables are tender. Add the lime juice, fish sauce, coriander and sugar; cook for 2 minutes. Serve with rice.
