Combine the curry paste, coconut
milk and 1/2 cup (125ml) water in a wok or large pan. Bring to the boil, stirring
occasionally. Add the lime leaves and onion;
boil for 3 minutes. Add the potato and pumpkin and
cook for 15 minutes, or until tender. Stir in the capsicum, zucchini,
corn and beans; simmer for 10 minutes, or until the vegetables are
tender. Add the lime juice, fish sauce,
coriander and sugar; cook for 2 minutes. Serve with rice.
