Roast Carrots and Parsnips With Honey Recipes

Ingredients :

parsnips, peeled

carrots, peeled

clear honey

sunflower oil

rosemary or thyme flowers (optional)

Method :
  1. Coat the carrots and parsnips with the honey and oil mixture.
  2. Arrange them in a baking dish and roast in a preheated oven at 190C/375F/Gas 5 for about an hour, basting frequently.
  3. When the vegetables are a golden brown and cooked through, transfer to a serving dish, sprinkle with herb flowers and serve immediately.
  4. This quantity is obviously for 4 people.
  5. If you have large vegetables, split them down the center; this will increase the portions.

Serves 4

A most beautiful side dish for any meat course. If your herb garden is brisling with rosemary or thyme flowers sprinkle them before serving.
