In a bowl,
mix the onion with the lime rind and juice. Set aside so that the lime
juice can soften the onion. Tip the tomatoes into a pan and add the
chilies and sugar. Heat gently. Meanwhile, cook the cauliflower in
boiling water for 5-8 minutes, until tender, then drain.
Add the onion
mixture to the tomatoes with salt to taste, stir and heat through, then
spoon about one third of the salsa into a serving dish. Arrange the
cauliflower on top of the salsa and spoon the remaining salsa on top.
Sprinkle with the feta, which should soften a little on contact. Serve
immediately, sprinkled with parsley.
