Potatoes and Onions Indian Style Recipes

Ingredients :

vegetable oil

black mustard seeds

finely chopped root ginger

green chili, seeded and finely chopped

ground coriander



potatoes, boiled and cubed

onions chopped



lemon juice

chopped coriander leaves

Method :
  1. Heat the oil over a high heat in a wok or deep pan.
  2. When the oil is hot, add the mustard seeds and cover immediately.
  3. Cook for 1 or 2 minutes until the seeds 'pop'.
  4. Reduce the heat slightly and add the ginger and chili and cook for 2 minutes more.
  5. Add the ground coriander, turmeric and paprika and stir into the ginger and chili mixture.
  6. Add the potatoes and onions and sauté for 10 minutes, stirring all the time.
  7. Add the water and sprinkle with the salt.
  8. Cover the pan once more and simmer the vegetables for about 15 minutes.
  9. Stir in the lemon juice and turn out into a warm serving bowl.
  10. Sprinkle with chopped coriander leaves.
