Method :
- Wash and scrub the potatoes and place in pot,
covering them with lightly salted water.
- Add the lemon rind.
- Bring to the boil and cook until tender.
- Drain.
- In a large frying pan, heat the butter and lemon
juice and toss the potatoes in the mixture for about 5 minutes.
- Serve sprinkled with salt and pepper.
- Garnish with the mint or any other herb.
