1 small red chili pepper, seeded and
thinly sliced
sea salt and freshly ground black pepper
to taste
balsamic vinegar, fro drizzling
1/3 cup (1.5 oz / 45g) parmesan shavings,
for serving
Method :
Cook noodles
as directed on package, then drain and rinse. Meanwhile, bring a
saucepan of water to a boil. Add broccoli florets and cook for 2
minutes. Drain and refresh in cold water. Drain again and set aside.
Warm oil in a
wok or large frying pan. Add onion, garlic and chili pepper and stir-fry
until onion softens, about 2 minutes. Stir in broccoli and cooked noodles.
Stir-fry until heated through, about 3 minutes. Season with salt and
pepper to taste.
Serve hot,
drizzled with balsamic vinegar and topped with parmesan shavings.
Hint - To make
parmesan shavings, use a vegetable peeler and shave thin curls from a
block of fresh parmesan.
