Wild Rice and Mushroom Soup Recipes

Ingredients :

900 ml beef stock

1 small onion

1 small green pepper

1 tbsp chopped fresh parsley

25 g wild rice

100 g button mushrooms

5 tbsp red wine

salt and pepper

Method :
  1. Put the stock into a pan.
  2. Add finely chopped onion, pepper and parsley.
  3. Bring to the boil, cover and simmer for 15 minutes.
  4. Wash the wild rice very thoroughly.
  5. Add to the stock, cover and simmer for 40 minutes.
  6. Slice the mushrooms thinly and add to the soup with the wine.
  7. Season to taste.
  8. Cover and simmer for 15 minutes.
  9. Serve hot.

Note :

Wild rice is extremely expensive but a little may be used to give flavor and texture to clear mushroom soup.
