Method :
- Preheat oven to 200C/400F/Gas 6.
- Oil 18-24 bun tins.
- Put all the ingredients into a
bowl and beat hard until light and creamy.
- Half fill the bun tins.
- Bake for 20 minutes.
- Cool on a wire rack.
Note :
These quickly made little cakes are
light and delicious. Mixed dried fruit may be used, or sultanas or
seedless raisins instead of currants.
