Wholemeal Currant Cakes Recipes

Ingredients :                                                            

150 g wholemeal self raising flour

pinch of salt

100 g margarine

100 g light soft brown sugar

75 g currants

2 eggs

Method :
  1. Preheat oven to 200C/400F/Gas 6.
  2. Oil 18-24 bun tins.
  3. Put all the ingredients into a bowl and beat hard until light and creamy.
  4. Half fill the bun tins.
  5. Bake for 20 minutes.
  6. Cool on a wire rack.

Note :

These quickly made little cakes are light and delicious. Mixed dried fruit may be used, or sultanas or seedless raisins instead of currants.
