Wholemeal Corn Fritters Recipes

Ingredients :

125 g wholemeal self raising flour

1 egg, slightly beaten

4 tbsp skimmed milk

185g canned sweet corn kernels, drained

Method :
  1. Make a well in the flour.
  2. Add the egg and milk to the well.
  3. With a wooden spoon gradually draw in the flour to make a smooth dough.
  4. Add corn and stir well.
  5. Heat the pan over medium heat and grease lightly with a paper towel or brush dipped in oil.
  6. When the pan is very hot, drop in tbsp of corn mixture.
  7. Allow to cook for 2-3 minutes, or until golden brown underneath.
  8. Flip over to cook the other side.
  9. Repeat until all the mixture has been used.

Serve corn fritters with soup, as a vegetable accompaniment to a main course, or on their own.
