Preheat the
oven to 400F. In a medium skillet, cook the bacon and onion. In a medium
saucepan, make the rice according to the package directions, bringing it
to a boil and simmering 45 minutes until well cooked. Add the bacon,
onion, tomatoes, salt and pepper and stir well. Pour into a casserole,
cover and bake 40 minutes in a 400F oven.
