Spanish Rice Recipes

Ingredients :

3 slices bacon, diced

1 onion, diced

1/2 cup rice

1 14 1/2-ounce can peeled tomatoes, chopped

salt and pepper

Method :

Preheat the oven to 400F. In a medium skillet, cook the bacon and onion. In a medium saucepan, make the rice according to the package directions, bringing it to a boil and simmering 45 minutes until well cooked. Add the bacon, onion, tomatoes, salt and pepper and stir well. Pour into a casserole, cover and bake 40 minutes in a 400F oven.
