Polenta Recipes

Ingredients :

1.2 liter water

225 g coarse cornmeal

1/2 tsp ground nutmeg

salt and pepper

50 g butter

Method :
  1. Bring water to the boil with a pinch of salt.
  2. Sprinkle in the cornmeal and stir well.
  3. Simmer over low heat for 20 minutes, stirring occasionally.
  4. When the mixture is thick, season with nutmeg, salt and pepper, and stir in the butter.
  5. Place the mixture in a greased ovenware dish.
  6. Bake at 200C/400F/Gas 6 for 25 minutes.
  7. Serve hot.

Note :

An Italian dish made from maize meal which may be served like vegetable, and is traditionally eaten with game. It makes a good supper dish on its own with a tomato or mushroom sauce, or with plenty of grated cheese.
