Little Date Cookies Recipes

Ingredients :

150 g wholemeal plain flour

100 g rolled oats

125 g demerara sugar

75 g hard margarine

1 egg

1/2 tsp ground mixed spice

pinch of salt

Filling :

225 g stoned dates

50 g demerara sugar

50 g chopped walnuts

150 ml water or orange juice

Method :
  1. Preheat oven to 190C/375F/Gas 5.
  2. Grease 24 tartlet tins.
  3. Stir the flour and oats together.
  4. Cream the sugar and margarine and work in the egg.
  5. Add the flour mixture with spice and salt and form into a dough.
  6. Roll out carefully on a floured board and cut into 48 rounds.
  7. Line the tins with half the rounds.
  8. Put the chopped dates, sugar, nuts, water or orange juice into a pan and heat gently, stirring until smooth.
  9. Leave until cold.
  10. Fill the tartlet cases with the mixture and damp the edges.
  11. Cover with remaining pastry rounds.
  12. Brush with a little milk and make a small hole in the center of each one.
  13. Bake for 20 minutes.
  14. Leave in tins for 5 minutes and lift out carefully to finish cooling on a wire rack.

Note :

Small cakes with a crunchy pastry and sweet filling of fruit and nuts, which are delicious served with whipped cream.
