Kitchri (Savory Rice and Lentils) Recipes

Ingredients :

250g red lentils

2 large onions, finely sliced

220g brown rice

1.15 liters vegetable stock

1 1/2 tsp garam marsala

Garnish :

spring onions, finely chopped

Method :
  1. Place lentils in a bowl of cold water; discard any that float to the surface.
  2. Rinse well under cold water.
  3. In a large frying pan, combine the onions, rice and lentils.
  4. Add the stock and garam marsala; bring mixture to the boil over a high heat.
  5. Reduce heat, cover and simmer for 45 minutes, or until rice and lentils are completely soft.
  6. Garnish Kitchri with chopped spring onions, serve hot.
