Method :
- Preheat oven to 180C/350F/Gas 4.
- Grease 3 baking sheets.
- Stir together the oats, flour and
wheat germ.
- Cream the butter and sugar until
light and fluffy.
- Work in the egg and essence.
- Gradually add the dry ingredients
to the creamed mixture.
- Fold in the sultanas, finely
chopped dried apricots and walnuts.
- Put teaspoonfuls of the mixture on
to prepared baking sheets.
- Bake for 15 minutes.
- Lift on to a wire rack to cool.
Note :
The mixture of oats, wholemeal flour
and dried fruit gives crisp little biscuits which are delicious with
milk or a hot drink.
