Health Crunch Cookies Recipes

Ingredients :

100 g rolled oats

50 g wholemeal self raising flour

2 tbsp wheat germ

65 g butter

100 g dark soft brown sugar

1 egg

1/2 tsp vanilla essence

75 g sultanas

75 g dried apricots

75 g chopped walnuts

Method :
  1. Preheat oven to 180C/350F/Gas 4.
  2. Grease 3 baking sheets.
  3. Stir together the oats, flour and wheat germ.
  4. Cream the butter and sugar until light and fluffy.
  5. Work in the egg and essence.
  6. Gradually add the dry ingredients to the creamed mixture.
  7. Fold in the sultanas, finely chopped dried apricots and walnuts.
  8. Put teaspoonfuls of the mixture on to prepared baking sheets.
  9. Bake for 15 minutes.
  10. Lift on to a wire rack to cool.

Note :

The mixture of oats, wholemeal flour and dried fruit gives crisp little biscuits which are delicious with milk or a hot drink.
