Golden Honeycomb Pudding Recipes

Ingredients :

450 ml creamy milk

150 g rolled oats

50 g light soft brown sugar

3 tbsp clear honey

25 g softened butter

1 lemon

pinch of ground cardamom

3 eggs

Method :
  1. Put the milk into a heavy pan and bring to the boil.
  2. Stir in the oats and cook gently for 5 minutes, stirring well.
  3. Remove from the heat.
  4. Beat in the sugar, honey and butter.
  5. Add the grated rind and juice of the lemon, and the cardamom.
  6. Separate the eggs and beat in the egg yolks.
  7. Whisk the egg whites to stiff peaks.
  8. Fold into the oat mixture.
  9. Put into a greased 1.81 liter pudding basin.
  10. Cover with greaseproof paper and foil.
  11. Steam for 1.5 hour.
  12. Turn out and serve with warm honey, golden syrup, custard or cream.

Note :

A light variation on the steamed pudding theme which has an unusual texture and delicious flavor.
