Corn Mould Recipes

Ingredients :

1 cup cornmeal, coarsely ground

2 1/2 cups water

salt

juice of 1 lemon

2 tbsp raw sugar

1 tbsp golden syrup

1 tbsp butter

Method :
  1. Cook the cornmeal in the water with a pinch of salt, watching carefully that it does not dry out.
  2. Stir frequently until it is thick and the cornmeal is tender.
  3. Stir in the remaining ingredients in order and spoon the mixture into a jelly mould lightly greased with butter.
  4. Turn out onto a plate for serving, decorate if liked with glace cherries and serve with vanilla custard or ice cream.
