Corn Bread Crunch Recipes

Ingredients :

50 g cracked wheat

300 ml boiling water

100 g coarse cornmeal

100 g plain flour

50 g rolled oats

50 g light soft brown sugar

3 tsp baking powder

1/2 tsp salt

2 egg

9 tbsp milk

75 g chopped walnuts

2 tbsp maple syrup or clear honey

Method :
  1. Preheat oven to 200C/400F/Gas 6.

  2. Grease a 9" square cake tin.

  3. Put the cracked wheat into a bowl and pour in the boiling water.

  4. Leave to stand for 10 minutes, drain and squeeze out excess moisture.

  5. Stir together cornmeal, flour, oats, sugar, baking powder and salt.

  6. Stir in the cracked wheat.

  7. Beat the eggs and milk together and work into the dry ingredients.

  8. Stir in the walnuts.

  9. Spread the mixture in the cake tin.

  10. Sprinkle with the maple syrup or honey.

  11. Bake for 20 minutes.

  12. Cut in squares and serve warm with butter or margarine, honey or maple syrup.

A quickly made sweet bread which is good for breakfast or teatime, served with butter and honey or syrup.
