Preheat oven to 180C/350F/Gas 4. Grease a base line a 7" round cake
tin. Put the flour, margarine, sugar,
almonds and eggs into a bowl. Beat hard until the mixture is
light and soft. Beat in the carrots and the grated
rind and juice of the lemon. Put into the prepared tin. Bake for 1.5 hours. Cool in the tin for 10 minutes,
then turn on to a wire rack to cool.
A simple cake flavored and sweetened by
carrots has a subtle almonds flavor. It needs no decoration, but some
demerara sugar and chopped nuts may be sprinkle don before baking to
give a crunchy finish..
