Butter Beans in Tomato Sauce Recipes

Ingredients : |
250g dried butter beans, soaked overnight
in cold water
2 x 400g cans chopped tomatoes
300ml vegetable stock
2 garlic cloves, chopped
2 tbsp extra virgin olive oil
1 tbsp chopped oregano
2 bay leaves
1 tsp caster sugar
1 tbsp lemon juice
2 tbsp chopped dill
salt and pepper
crusty bread, to serve |
Method :
- Drain the soaked beans, wash well
and set aside.
- Put the tomatoes, stock, garlic,
olive oil, oregano, bay leaves and sugar in a large saucepan and
bring to the boil.
- Stir in the beans, return to the
boil, cover and simmer over a low heat for 90 minutes, or until the
beans are very tender.
- Remove the lid and simmer for a
further 30 minutes until the sauce is reduced and thickened.
- Stir in the lemon juice, chopped
dill and season to taste with salt and pepper.
- Leave to cool slightly, serve warm
with some crusty bread.
