Stir together the flours, wheat
germ, sugar and baking powder with a pinch of salt. Mix the eggs and oil and stir into
the dry ingredients. Add enough liquid to make a batter
with the consistency of thick cream. Grease a heavy frying pan and heat
until the pan is hot. Pour in batter to cover the base
thinly. Cook gently until the surface is
set and forming bubbly holes. Turn the pancake and cook the
underside until golden. Keep hot while cooking the other
pancakes.
This recipe should produce 8 large
pancakes, which are delicious with maple syrup, honey or brown sugar and
lemon juice.
