Veggie Medley Tomato Sauce Recipes

Ingredients :

2 tbsp olive oil

1 clove garlic, minced

1 small onion, minced

1 cup chopped mushrooms

1/2 cup chopped carrots

1 cup chopped green peppers

1/2 cup chopped celery

1 tsp black pepper

1/2 tsp sea salt

2 pounds Roma tomatoes, peeled and finely chopped

1/4 cup finely chopped fresh basil

2 tbsp finely chopped fresh oregano

2 tbsp finely chopped fresh thyme

2 tbsp finely chopped fresh rosemary

Method :

Heat oil in large saucepan and sauté garlic until fragrant. Add minced onion, mushrooms, carrots, green peppers, celery, black pepper and salt and cook just until carrots are tender. Stir in tomatoes and herbs, and simmer about 20 minutes. Serve hot over pasta or Wild Mushroom Calzones.

Serves 8

Lots of fresh herbs and vegetables combine with ripe Roma tomatoes to make this a hearty, low-fat sauce that complements almost any dish.
