Tomato Rice Recipes

Ingredients :

1/4 cup cooking oil

 

A

2 onions, finely chopped

4 cloves garlic, finely chopped

2 cm piece ginger, minced

4 cm piece cinnamon bark

3 cloves

3 petals star anise

3 cardamoms, crushed

500g rice, washed and drained

3 cups water

1/3 cup tomato ketchup

salt to taste

Method :

Heat oil and stir-fry ingredients A until aromatic. Stir in rice and fry until rice is coated with oil. Transfer rice to a rice cooker. Add water, tomato ketchup and salt to taste. Cook rice. Keep covered till water is absorbed and rice is cooked. Stir rice to loosen rice grains.

* For more fibre and vitamins, serve with fresh or cooked vegetables.
