Tomato Consommé With Avocado Nut Sauce Recipes

Ingredients :

575 ml tomato juice

2 tsp gelatine

3 tbsp cold water

1 tsp celery slat

1 tsp Worcester sauce

1 medium ripe avocado

4 tbsp single cream

1 tbsp lemon juice

25 g walnuts, very finely chopped

seasoning to taste

2 tsp finely grated orange peel

Method :
  1. Pour juice into bowl.
  2. Tip gelatine into saucepan.
  3. Add water.
  4. Leave 5 minutes to soften.
  5. Stand over a low heat.
  6. Stir until melted and completely transparent.
  7. Mix with the juice and stir in celery salt and Worcester sauce.
  8. Cover and refrigerate about 2 hours or until lightly set.
  9. Break up with a fork.
  10. Spoon into 6 glass bowls.
  11. For the Avocado Nut Sauce, halve avocado and mash flesh finely with cream and lemon juice.
  12. Stir in walnuts.
  13. Season to taste then spoon over Consommé.
  14. Sprinkle with orange peel and serve.

Serves 4-6
