Stuffed Capsicums Cooking Recipes

Ingredients :

large red capsicums

short grain rice

olive oil

onion, finely chopped

cloves garlic, crushed

tomato, finely chopped

grated Cheddar cheese

finely grated Parmesan

chopped fresh basil

chopped fresh parsley

Method :
  1. Preheat the oven to moderate 180C/350F/Gas 4.
  2. Cut the capsicums in half lengthways.
  3. Add the rice to a pan of boiling water and cook for 12 minutes.
  4. Drain, and transfer to a bowl.
  5. Heat the oil in a frying pan, add the onion and cook for 5-8 minutes, or until golden.
  6. Add the garlic and cook for 1 minute.
  7. Add to the rice with the tomato, cheeses, basil and parsley.
  8. Season with salt and pepper.
  9. Spoon into the capsicum shells and place on a baking tray.
  10. Bake for 30 minutes, or until the capsicums are soft and the filling is golden brown.

Serves 4

Preparation : 20 minutes

Cooking : 55 minutes
