Skinny Lemon Caper Sauce Recipes

Ingredients :

2 tbsp olive oil

3 garlic cloves, minced

1/2 tsp white pepper

1/2 tsp sea salt

2 tsp finely grated fresh ginger

1 tbsp whole wheat flour

1/2 cup vegetable stock

1/2 cup soy milk

1/2 cup lemon juice

1/4 cup capers

Method :

In a medium saucepan, heat oil and sauté garlic, pepper, salt and ginger until garlic is golden. Add flour and stir to coat garlic and ginger. Cook for 2-3 minutes, stirring frequently. Slowly stir in stock and soy milk. Simmer for 3-5 minutes longer, stirring frequently, until sauce is thick and creamy. Place lemon juice in small mixing bowl. Carefully whisk in hot soy milk mixture a little at a time. Beat vigorously until creamy and smooth. Return to pan, add capers, and heat through on very low heat. Serve immediately as a glaze over broiled fish or sauce for hot vegetables.

This creamy, special sauce is low fat and dairy free, with the distinctive flavors of capers, tangy lemon, pungent garlic, and a whisper of spicy ginger. So rich and flavorful, you will swear it's decadent.
