tomatoes, roughly chopped

small eggplant (aubergine), sliced and cut in four

zucchini (courgette), sliced

carrot, peeled and sliced

red capsicum (pepper), sliced

green capsicum (pepper), sliced

onion, peeled and sliced

clove garlic, finely chopped

chopped fresh basil

Method :
  1. Place all the ingredients in a nonstick frying pan.

  2. Cook gently for 30 minutes.

  3. Stir from time to time to prevent sticking.

  4. Serve as a meal accompaniment.
