capsicums (peppers), a mixture of green,
yellow and red, seeded and thickly sliced
tomatoes, peeled and chopped
freshly ground black pepper to taste
Method :
Heat oil in a heavy frying pan. Sauté the onions, and garlic with
the crushed bay leaves. When the onion is starting to
color, add the capsicums (peppers) and season. Continue to sauté for another 10
minutes on moderate heat. Stir in the tomatoes. Cover with a lid. Continue cooking until the
capsicum (pepper) is soft and the tomatoes have formed a thickish
sauce. Serve hot or cold.
