baguette or other long French loaf

tomatoes, peeled and chopped

onion, peeled and finely chopped

spring onions, finely chopped

green capsicums (peppers), seeded and chopped

red capsicum (peppers), seeded and chopped

black olives, pitted and chopped

gherkins, chopped

capers

olive oil

freshly ground black pepper, to taste

Method :

Halve the loaf lengthways. Scoop out the soft interior. Crumble into a bowl with vegetables, olives, gherkins and capers. Beat mixture well. Stir in oil and pepper. Divide tomato mixture between 2 bread halves. Reassemble, wrapping firmly in foil. Refrigerate overnight. Cut into thin slices to serve.
