Gazpacho Recipes

Ingredients :

Garnish :




tomatoes, peeled, seeded and chopped

cucumber, seeded and diced

cloves garlic, finely chopped

spring onions, finely sliced

green capsicum (pepper), seeded and chopped

olive oil

white wine vinegar

chopped parsley

iced water

Tabasco sauce, to taste

freshly ground black pepper


cucumber, seeded and diced

green capsicum (pepper), diced

slices whole meal bread, diced

Method :
  1. Combine tomatoes, cucumber, garlic, spring onions, capsicum, oil, vinegar, pepper, Tabasco sauce and parsley.
  2. Chill well.
  3. Just before serving stir through iced water.
  4. Serve soup in chilled bowls.
  5. Place cucumber, capsicum and bread in small bowls.
  6. Guests can help themselves to garnish as liked.

Serves 10 - 12

2 hard boiled eggs can be chopped and offered as another garnish.
