Blood Orange Ambrosia Recipes

Ingredients :

1/2 cup chopped pecans

1 cup blood orange sections (tangerines or navel oranges may be substituted)

1 banana, sliced on the diagonal

1/2 cup blackberries

1 very ripe peach, sliced

1/2 cup seedless red grapes

1 cup low fat soy yogurt

1 tsp vanilla

2 tbsp honey

1/2 cup coconut

Method :

Toast pecans at 375C for 5-8 minutes. Combine orange sections, banana slices, blackberries, peach slices, and grapes in medium mixing bowl. In small bowl, combine soy yogurt, vanilla, and honey and mix well. Stir in coconut and toasted pecans. Toss fruit with soy yogurt dressing and chill before serving.

With its combination of blood oranges, coconut, pecans, and sweet, juicy fruits, this low fat dessert lives up to its name - truly ambrosial.

Serves 4-6
