Avocados with Strawberry Vinaigrette Recipes

Ingredients :

8 oz (250g) strawberries, hulls removed

2 tbsp olive oil

3 tbsp lemon juice

1 tsp superfine (caster) sugar

freshly ground black pepper to taste

2 ripe avocados

green leaves, for garnish

Method :

Place strawberries, olive oil, 2 tbsp lemon juice, sugar and pepper in a food processor. Process until a thick sauce forms, about 30 seconds. Transfer to a pitcher, cover and refrigerate until ready to serve.

Slice each avocado in half through stem. Peel away outer skin and remove pit. Brush cut surfaces with remaining lemon juice.

Place avocado halves on serving plates. Top with dressing and garnish with fresh green leaves from your garden.

Hint - Green leaves such as flat-leaf parsley, rosemary, sage and mint may be used for garnish.
