Avocado Open-Facers Recipes

mayonnaise or salad dressing

lemon juice

whole wheat bread, toasted

avocado, peeled and sliced

tomato, thinly sliced

bacon, crisp-cooked and drained

leaf lettuce

thousand island salad dressing

Method :
  1. Brush avocado slices with lime juice; heat in slow oven (300) 5-10 minutes.

  2. Melt butter in small saucepan; add curry, salt, tomato and onion.

  3. Cook till onion is tender, about 5 minutes.

  4. Add shrimp; heat through.

  5. Stir in sour cream; heat through but do not boil.

  6. Top muffin halves with warm avocado; spoon shrimp curry over.
