Avocado Mousse Recipes

Ingredients :

2 tbsp

80 ml

435 ml

1 tsp

2 tsp

125 ml

125 ml

Salad :


2 tbsp

gelatine soaked in 80 ml cold water

boiling chicken stock

avocado purée

onion juice

Worcestershire sauce


cream, lightly whipped


small green capsicums (peppers), blanched and shredded

prepared vinaigrette dressing

black olives, halved and stoned

red pimiento threads

Method :
  1. Oil a 5 cup (11/4 liter) mould.
  2. Dissolve the soaked gelatine in boiling stock.
  3. Whisk into the avocado purée with onion juice and Worcestershire sauce.
  4. Set aside to cool.
  5. When cold, fold in mayonnaise and lightly whipped cream.
  6. Pour into the prepared mould.
  7. Place in the refrigerator to set.
  8. To prepare salad : Lightly toss capsicums (peppers), olives and pimiento threads in vinaigrette dressing.
  9. To serve, unmould mousse on a platter and fill center with salad vegetables.
