Tomatoes Stuffed with
Mushrooms (tomates farcies au maigre) Recipes
Ingredients :
6 large tomatoes
salt
2oz finely chopped onion
1 tbsp oil
5oz mushrooms
2oz butter
pepper
breadcrumbs
Method :
Wash the
tomatoes and slice off their tops. Spoon out their seeds and core
without breaking the skins. Sprinkle in a little salt and leave them to
stand. After about 30 minutes turn them upside down to drain. Meanwhile,
chop the mushrooms and onions and gently fry them in the oil and half
the butter until soft. Season to taste with pepper. Fill the tomatoes
with this stuffing and put a dot of butter on each. Cover the top with
breadcrumbs, and cook on a well-greased ovenproof dish in a moderate
oven (180C, 350F, Gas 4) for 30 minutes.
