Saute Potatoes with Onions (Pommes De Terre A La Lyonnaise) Recipes
Ingredients :
675g (1.5 lb) potatoes, scrubbed
salt and freshly milled black pepper
75g (3 oz) butter
15ml (1 tbsp) vegetable oil
2 onions, skinned and thinly sliced
30ml (2 tbsp) chopped fresh parsley
Method :
Cook the
potatoes in their skins in a medium saucepan of boiling salted water for
about 20 minutes, or until they are just tender. Drain and leave until
cool enough to handle. Peel the potatoes and cut them into 0.5cm (1/4
inch) thick slices.
Heat 50g (2
oz) of the butter and the oil in a large frying pan. Add the potatoes
and cook them until they are crisp and golden brown, turning them
several times. Heat the remaining butter in a small frying pan. Add the
onions and cook for about 10 minutes until they are golden. Add the
onions to the potatoes, stirring them in lightly. Season the mixture to
taste and sprinkle with the parsley. Serve at once.
